In modern commercial agriculture, farms often rely on chemicals to manage pests, leading to the depletion of essential soil nutrients over time. While these practices may boost short-term crop yields, they compromise the long-term health of the soil. In contrast, regenerative farming surpasses mere sustainability by employing natural techniques that benefit both soil quality and environmental and human health.

Regenerative Agriculture hasn’t been legally defined—it means different things to different people. Generally, it prioritizes soil health. It focuses on five principles of soil health:

  2. Minimize Soil Disturbance
  3. Living Roots
  4. Keep Soil Covered
  5. Livestock Integration

Regenerative Organic Certified® uses the USDA Certified Organic standard as a baseline and adds important criteria and benchmarks incorporating the three major pillars of regenerative organic agriculture into one certification.

Lundberg set a goal to certify all the organic rice we grow as Regenerative Organic Certified® by 2027! As pioneers in the organic movement, Lundberg played a key role in the development of organic standards. Similarly, the development of regenerative organic standards is seen as a vital step in holding the industry accountable. Lundberg is actively working with the Regenerative Organic Alliance to help establish regenerative organic standards for California-grown rice. Together, these efforts aim to raise the standards and ensure sustainable practices for generations to come.

Lundberg Grilled Eggplant Bowl

Grilled Eggplant Bowl:

Grilling season but make it vegan! These Grilled Eggplant Bowls are packed with so much smoky, savory flavor you won’t even miss the meat. Add a drizzle of marinade, cashews for crunch, and soak it all up with perfectly fluffy Organic California White Jasmine Rice.

Ingredients:

  • 1 Cup Organic White Jasmine Rice
  • 1 1/2 Cups of Water
  • 1 Eggplant, Large, Sliced
  • 3/4 Cups Bachan’s Original Japanese Barbecue Sauce (or Bachan’s Gluten-Free Japanese Barbecue Sauce)
  • 3/4 Cups Cashews, Roasted
  • 1/4 Cups Lundberg Family Farms Organic Brown Rice Syrup or maple syrup
  • 2 Tbsp Garlic, Minced
  • 2 Tbsp Ginger, Fresh, Grated
  • 1 Tbsp Vegetable Oil
  • 3 Stalks, Green Onion
  • Toasted sesame seeds, for garnish
  • Red chili flakes, for garnish
  • Green onion, for garnish

Instructions:

  1. Combine rice, liquid, and butter or oil in a pot and bring to a boil. Cover with a tight-fitting lid. Reduce heat to maintain a low simmer and cook for 15 minutes. Remove from heat (keep covered) and steam for 5 minutes. Set aside.
  2. In a separate saucepan, add Bachan’s Japanese Barbecue Sauce and brown rice syrup or maple syrup over medium heat. Add garlic and ginger. Simmer for 5 minutes, or until a sauce consistency has been achieved.
  3. Slice eggplant into 3/4 inch strips, lightly brush with marinade on both sides, and place on a well-oiled grill over medium heat for 5-7 minutes per side. Add green onion to the grill pan for 5 minutes, turning occasionally.
  4. Prepare bowl with about 1 cup of cooked rice, 3 slices of grilled eggplant, 1 grilled green onion, and 1/4 cup of roasted cashews. Garnish with sliced green onion, toasted sesame seeds, and red chili flakes. Finally, drizzle some of the remaining marinade over the bowl. Enjoy!
